I know that I’m not alone when I say that I definitely indulged too much over the holidays. It was a great week of endless food and drink. That’s the point right? And like many of us out there I want to eat just a little bit healthier in the New Year. We all know how most New Year’s resolutions turn out…. I’m hoping that I can keep it up for at least a couple weeks!
This sugar snap pea and radish salad is super refreshing, light, and healthy. It’s just what we need to get back on track. The quick preparation time also makes it perfect for those busy nights when time is not on our side. The peas are steamed for just a few minutes, remaining crisp and brightly coloured. The salad is tossed with a simple soy sauce and sesame dressing, and finished with radishes and toasted sesame seeds. Healthy eating can’t get easier than this!
- 1.5 cups of string-less sugar snap peas (or sugar snap peas with strings removed)
- 4 radishes, quartered
- 1 tsp sesame seeds
- 1 tsp soy sauce
- ½ tsp sesame oil
- Toast sesame seeds over low-medium heat until lightly golden.
- Prepare a bowl of ice water for the sugar snap peas. Steam sugar snap peas for 3 minutes. The peas should still have a nice crunch. Immediately plunge peas into the ice water to stop the cooking process. Drain and refrigerate.
- When ready to serve, mix together the soy sauce and sesame oil. Toss with the sugar snap peas and radishes. Sprinkle sesame seeds on top to garnish.
